Baco, Ugni Blanc, Colombard and Folle Blanche are picked early and fermented dry to a low alcohol without sulphur. The real difference comes at distillation, a single run through a continuous still at low strength, keeping far more flavour than Cognac's double pot method. Many years in Gascon oak follow, with a slow loss of strength to evaporation.\u003c\/p\u003e\u003cp\u003eRich and dry, bottled at 46 per cent, with prune, toffee and the rancio that only long cask ageing brings.
