Here the base wine comes chiefly from Ugni Blanc, backed by Folle Blanche, Colombard and Baco, and is left low in alcohol and high in acid, which is what distillation needs. The estate runs it once through the local continuous still, keeping fruit and aromatic weight in the spirit, then ages it in Gascon oak without blending across years.\u003c\/p\u003e\u003cp\u003eStone fruit, vanilla and a warm, spicy finish on a firm frame.
