This cuvée comes from the plateau at Daix, where the vines lie at around 400 metres, an altitude that holds acidity and gives the fruit a clear, unforced purity. The domaine was built by Denis Mortet in Gevrey-Chambertin and is now run by his son Arnaud, who has kept the family habit of treating the humbler appellations with the same care as the crus. Yields here are kept very low, which accounts for the depth and the capacity to age. Over half the bunches went into the vat whole, and the wine saw only ten per cent new oak.\u003c\/p\u003e\n\u003cp\u003eApproachable on release and worth five to eight years in the cellar, it suits roast chicken, mushroom risotto or a plate of charcuterie.
