The family has grown vines in Anjou since the seventeenth century, and the estate is now directed by Florent Baumard, who also makes Savennieres and Quarts de Chaume. Chenin Blanc here ripens slowly and is picked in successive tries, taking in botrytised and passerille berries as they come; pressing is gentle and fermentation is carried out in temperature-controlled tank rather than barrel, so that the schist and the fruit lead rather than wood.
