The Clos St Catherine occupies a south-facing shoulder of that schist at Rochefort-sur-Loire, above the river. Fruit is picked over several tries, pressed slowly and fermented in stainless steel at low temperature, with no wood at any point, an approach Florent Baumard follows across the range and which keeps these wines unusually precise for their sweetness. Residual sugar here settled at 138 grams per litre.
