The Baumard family, based at Rochefort-sur-Loire, has worked in the Layon and Savennières for generations and holds the Clos Saint Yves as one of its named parcels. Fruit is picked in successive passes, pressed and fermented in tank without malolactic conversion, then aged on lees to build texture while keeping the wine fully dry.
