It is the grape of vin jaune, aged for more than six years in barrels left deliberately unfilled beneath a veil of yeast, but it is also made in a topped-up style that shows the variety more directly. The Côtes du Jura appellation, which stretches from Salins-les-Bains down to Saint-Amour, allows both. Savagnin is planted in small quantity, and the entire Jura vineyard amounts to only around two thousand hectares, a remnant of the twenty thousand or so that stood here before phylloxera and the First World War.
