It shares its name with a grand cru climat on the hill of Corton nearby, which is no coincidence: both sit on the kind of ground that gives Pinot Noir structure without heaviness. David Croix farms 0.88 hectares here at around 300 metres on a 25-degree incline, spread across three parcels planted in 1983, 1987 and 1991. All face east on thin, gravelly soils and have been farmed organically for more than a decade. The fruit was half destemmed and extracted carefully before ageing in used casks alone, so the wine keeps its mineral, rocky, earthy cast rather than taking on oak.\u003c\/p\u003e\n\u003cp\u003eGive young bottles air, or cellar them for five to ten years.
