Jasper Morris MW calls it the heartland of Beaune, and it typically gives the appellation's deepest and longest-lived wines. David Croix farms an old parcel planted in 1968, sitting immediately beside Vigne de l'Enfant Jésus, the most favoured stretch of the slope, on brown clay soils with a good proportion of gravel. The vines have been farmed organically for more than a decade. Whole bunches are used carefully rather than as a signature, and the resulting wine carries dark cherry fruit with a floral edge, considerable concentration and a long, powdery finish. Croix has run the domaine since 2005 and works with restraint in the cellar, favouring used oak and gentle extraction.\u003c\/p\u003e\n\u003cp\u003eIt rewards five to fifteen years in the cellar and suits roast duck, venison or a mature hard cheese.
