The domaine farms half a hectare across two parcels: Petite Pertuisots, planted in 1971, and Grande Pertuisots, planted in 1987. Both sit on brown clay topsoils not unlike those of Pommard over a bedrock of Jurassic limestone, though the topsoil here is thinner and the site cooler, which slows ripening and keeps acidity intact. The wine was fermented with about one-third whole bunches and raised with minimal new oak, so the stony character of the terroir is left to carry the wine. Jasper Morris MW, of Inside Burgundy, holds a minority shareholding in the vineyard, which is a small piece of Burgundian trivia worth knowing.\u003c\/p\u003e\n\u003cp\u003eAlready open but structured for a decade.
