Combe Bazin is a steep site on white soils, and Domaine des Croix works a single hectare there. The vines are in poor condition and yield very little, so David Croix is replanting with mass-selection cuttings; there will be a break in production after this release while the young vines mature. The grapes are lightly crushed, given a gentle three-hour press, then fermented with wild yeasts and aged for a year on lees in used 500-litre barrels, followed by six months in concrete. Croix describes the archetypal Combe Bazin as a Saint-Romain that fills out the palate.\u003c\/p\u003e\n\u003cp\u003eDrinking well on release and good for four or five years.
