Vineyards of this kind ripen Cabernet Franc slowly and give wines with fine, chalk-driven tannin and unusual length for the appellation. The Gauthier family farms the plot organically, ploughs the soils and harvests by hand at low yields. The bunches are destemmed and fermented with the vineyard's own yeasts, macerated slowly, then given a long elevage in seasoned oak barrels.
