Cider apples, dozens of local sweet, bittersweet, bitter and acidic varieties, are blended for structure and perfume, milled, pressed and left to ferment naturally for months. The dry cider is run through copper stills and laid down in oak in a damp cellar, where the strength falls slowly and dried-apple and rancio notes build.\u003c\/p\u003e\u003cp\u003eDecades in cask have made it mellow and complex, with baked apple, toffee and warm spice.
