The fruit is a mix of bitter, bittersweet, sharp and sweet cider apples, pressed and fermented over several months into dry cider before it's distilled. In the Pays d'Auge the rules require double distillation in a pot still; elsewhere in Normandy a single column run is used. Bottled at 42 per cent.\u003c\/p\u003e\u003cp\u003eBright and appley, finishing warm and dry. Serve neat at 18–20°C after dinner, or the Norman way, as a pause in the middle of a long meal.
