What sets this bottling apart is the grape. Rather than the Chardonnay that dominates most Jura sparkling, it draws on Savagnin, the late-ripening white variety that is the region's own and is more often associated with the wines of Château-Chalon and Arbois. Savagnin ripens late and holds its acidity well, which suits a base wine destined for a second fermentation.
