The domaine farms parcels around the village of Bué, south-west of the town, on the caillottes and terres blanches soils that give the appellation its two faces. The wine is pressed whole-bunch, fermented cool in stainless steel and left on lees before bottling, with no oak.\u003c\/p\u003e\u003cp\u003eServe at 8 to 10 degrees with oysters, goat's cheese from Chavignol, or asparagus.
