This is the most perfumed of the ten, with vineyards on decomposed pink granite that give lift, fine tannin and a floral edge. Picking is by hand, as it must be throughout the region, and the whole-bunch, semi-carbonic ferment keeps extraction gentle and the aromatics fresh. Ageing in tank and older wood, with little or no new oak, lets the granite character come straight through.\u003c\/p\u003e\n\u003cp\u003eLight in body but full of flavour, with red cherry, violets and a chalky, savoury finish.
