Vincent Dureuil is the reference grower of the appellation and farms organically. This cuvée comes from three plots totalling just under three hectares: Le Meix Cadot, Rosey and Montagne de Remenot. The vines now average around fifty years, which shows in the depth of a wine at village level. A small proportion of whole bunches went into the fermentation, preceded by a pre-ferment cold soak in the manner of Henri Jayer to draw out perfume and softer tannin, and the wine was raised for twelve months in one-third new oak. Australian allocations are very small.\u003c\/p\u003e\n\u003cp\u003eApproachable at two years and good for six to eight.
