His village red comes from Le Meix Cadot, Rosey and Montagne de Remenot, all farmed organically, with an average vine age of about 50 years. The wine is fermented with a small proportion of whole bunches and matured for twelve months in oak, a third of it new. Dureuil favours a Jayer-style cold soak before fermentation, drawing out the prettier aromatics and softening the tannins, which suits Rully’s naturally bright, red-fruited character. The result is a touchstone for the appellation: perfumed and detailed rather than heavy, with the structure to hold for some years.\u003c\/p\u003e\n\u003cp\u003eApproachable now and holding for six to eight years.
