The area is Muscadet country, but he also keeps older parcels of this pink-skinned mutation of Sauvignon Blanc, once widespread in the Loire and now grown by only a handful of producers. Because it sits outside the local appellation rules, it's labelled Val de Loire. Sandy soils over gneiss, a gentle pressing, a cool ferment and several months on fine lees complete the picture, with no new oak.\u003c\/p\u003e\u003cp\u003eLight and dry, with citrus, white peach and a saline, slightly grippy finish.
