Chidaine farms biodynamically, and this clos, a flint-stone's throw from Clos Habert, slopes down towards the Loire from high ground. The soil is clay and coarse flint over a limestone subsoil, the type known locally as les perruches, and the vines reach up to ninety years of age. Chidaine's holding is spread across several plots and the fruit is hand-harvested in several tris, then fermented naturally in 600-litre demi-muids over a period of up to ten months.
