This bottling comes from mature vines of 35 to 50 years across the hillside terroirs of Les Chasseignes, Les Longues Fins and La Rue de Veaux, all on limestone rather than the more fertile, more productive plains that supply most Sancerre. Boulay also folds in fruit from younger vines on the great sites of La Grande Côte, Clos de Beaujeu and Monts Damnés, which is unusual generosity at this level. The juice ferments spontaneously and rests eight months on lees in tank, with a small volume in a single large wooden cask. Even as the range's opening wine, it shows the texture and stony, saline character the grower is known for.\u003c\/p\u003e\n\u003cp\u003eDrink now or hold five years.
