The parcels are mostly slopes on the Chavignol hillside terroirs of Les Chasseignes, Les Longues Fins and La Rue de Veaux, which distinguishes the wine from the bulk of Sancerre, grown on the more fertile and productive soils of the plains. Fruit from younger vines on the celebrated terroirs of La Grande Côte, Clos de Beaujeu and Monts Damnés also goes into the blend. The juice ferments spontaneously and rests for eight months on lees in tank, with a small volume in a single large wooden cask. Boulay's proposition is that Sauvignon Blanc here works as Chardonnay does in Burgundy, as the messenger rather than the message, and this wine bears that out at the least expensive point in the range.\u003c\/p\u003e\n\u003cp\u003eReady on release and good for five years or so.
