Gérard Boulay farms two parcels here, including a block within the original monastic clos, planted to vines of between thirty and one hundred and ten years of age. The slope is Kimmeridgian limestone and clay, the terres blanches of the region, and it is exceptionally rocky, littered with fossils in a way that recalls parts of Chablis. That makes it very difficult ground to work, and a second parcel closer to the village runs at a gradient of sixty per cent. Together these south-east facing plots give the domaine's most structured and nervy wines. The 2020 was fermented naturally and raised for ten months, sixty per cent in large upright cask and the rest in three and four-year-old 300-litre barrels.\u003c\/p\u003e\n\u003cp\u003eGive it a year or two and drink over the following decade.
