Monts-Damnés is its best-known slope, and Gérard Boulay farms 45-year-old vines on one of its sharpest inclines, a south-facing parcel on terres blanches, the white chalky clay and limestone that gives these wines their spine. The plot sits directly alongside Vatan’s Clos la Néore. Being one of the warmest sites in Chavignol, the fruit ripens fully, and Boulay works to keep that ripeness in balance with tension. The wine is fermented and raised in three- to four-year-old Tronçais casks bought from Domaine Rousseau in Gevrey-Chambertin, then finished in larger cask before bottling, so the oak builds texture rather than flavour.\u003c\/p\u003e\n\u003cp\u003eApproachable now but built to gain over five to eight years in the cellar.
