Exogyra virgula is the fossil oyster whose comma-shaped shells give the Kimmeridgian limestone here its name and much of its character; the same rock underlies the best of Chablis and brings a comparable salinity and smoky freshness. These old vines sit on north-facing slopes at 170 to 200 metres, on soil thick with the fossils. They are sélection massale rather than clonal plantings, and the combination of that material, the pure limestone, the farming and the cool northern climate produces a Sauvignon with little in common with the variety’s better-known expressions.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and worth four or five years.
