Romain Guiberteau rebuilt the family domaine at Mollay from vineyards that had been leased out for years, and this bottling is the entry point to the range, blended from several parcels on shallow soils over the limestone. The fruit is hand picked, pressed slowly and fermented with indigenous yeasts, mostly in older barrels with some larger wood, then left on lees for several months to build texture. There is no new oak to speak of and sulphur is used sparingly. The wine is dry, with the firm acidity and chalky pull that mark Chenin from this ground.\u003c\/p\u003e\n\u003cp\u003eReady on release and will keep developing for some years.
