The Clos des Carmes is one of them, a small parcel of Chenin Blanc on shallow soil directly over tuffeau, farmed by Romain Guiberteau from his base at Mollay. Yields are low, the fruit is picked by hand in successive passes, and the wine is pressed slowly, fermented with indigenous yeasts in barrel and left on its full lees for an extended period without stirring. Sulphur is used sparingly and there is little or no new oak, so the concentration comes from the site rather than the cellar.\u003c\/p\u003e\n\u003cp\u003eTight when young and best given several years, or a decant.
