The site is the classic clay and limestone of the region, but with only about thirty centimetres of topsoil before the roots reach the pure chalk bedrock, which is what gives the wine its savoury, mineral drive. It is quickly establishing itself among Saumur’s finest white sites. The Chenin Blanc is fermented and raised for twelve months on lees in two- to four-year-old 600-litre barrels, light-toast casks from Atelier Centre France and François Frères that previously held the Brézé cuvée, followed by six months in tank. Malolactic conversion did not take place in this cuvée, which leaves the palate taut and energetic.\u003c\/p\u003e\n\u003cp\u003eWorth three to five years in bottle and good for a decade.
