Les Chapaudaises lies within half a kilometre of the Brézé hill, next to Guiberteau’s monopole Clos de Guichaux and on the same sandy tuffeau limestone. The parcel is planted to a mix of Chenin Blanc and old-vine Cabernet Franc; one hectare of the Chenin is leased to Brendan Stater-West, with the rest going into the Saumur Blanc, but it is the 1948 Cabernet Franc that matters here. The fruit is destemmed and wild-fermented in concrete, then aged for a year in conical Rousseau vats before resting six months in tank. The wine is layered and sinewy, with crunchy red fruit, cured meat, earth and spice over fine tannins.\u003c\/p\u003e\n\u003cp\u003eApproachable now but likely to improve for at least another five years.
