Domaine Henri Germain makes only a small quantity here, from a parcel in Les Battaudes below the Abbaye de Morgeot on the Chassagne-Remigny boundary, planted in 1951. A proportion of whole bunches went into the fermentation and the wine was raised with only a small percentage of new oak, an approach that suits fruit of this age and keeps the perfume intact. The result runs against the reputation of Chassagne rouge as a sturdy, earthbound wine: it is lifted and scented, with finesse rather than weight, and it reads as a Germain wine before it reads as a Chassagne.\u003c\/p\u003e\n\u003cp\u003eReady within two years and good for eight to ten.
