La Goujonne is one such site. Olivier Lamy works a 1.06-hectare plot planted in the 1960s in the middle of the village. His red winemaking has become steadily more precise: roughly half whole bunches went into the fermentation, the wine was raised in used barrels with no new wood, and no sulphur was added until bottling. That combination gives a red with clear fruit definition and fine tannin rather than the rustic weight Chassagne rouge could once show.\u003c\/p\u003e\n\u003cp\u003eApproachable at two years and good for eight.
