La Princée draws on just under three hectares spread over ten plots, all in the cooler, east-facing part of the appellation on chalky, mineral soils. A third of the vines are more than sixty years old, the remainder planted in 1985 and 2000, and this bottling also carries about ten per cent of fruit from the premier cru Les Frionnes. Olivier Lamy's approach is consistent across the range: dense plantings, low yields, whole-bunch pressing, indigenous-yeast ferments and ageing in used barrels, the aim being to transmit limestone rather than winemaking. At village level the result is a taut, smoky style of white Burgundy with a good deal of energy and no excess weight.\u003c\/p\u003e\n\u003cp\u003eReady now and holding well for four to six years.
