Olivier Lamy has built La Princée from ten village plots totalling just under three hectares; a third of the vines are over 60 years old and the rest were planted in 1985 and 2000. This release also takes in 10 per cent from the premier cru Les Frionnes. All the parcels lie in the combe itself, open to the cold northern winds that funnel down it, so they are always among the last the domaine picks. Since the new cellar was built, a fair proportion of the maturation happens in large Stockinger casks rather than barrique, which suits the racy, smoky, rocky character these cooler sites give.\u003c\/p\u003e\n\u003cp\u003eDrink from release out to about eight years.
