Lamy's red comes from a tiny parcel of forty-five-year-old vines within the Clos itself, now planted at a density of 20,000 vines per hectare. The vines are not trimmed but wrapped together at the top, an old practice that keeps the canopy working late in the season, and they produce tiny berries with very little juice. The wine is made with 70 per cent whole-bunch vinification, which adds brightness, structure and a tapering finish rather than any green edge.\u003c\/p\u003e\n\u003cp\u003eDrink from two years and across the following decade.
