Lamy farms both white and red inside the clos; this is the Pinot Noir, from a tiny parcel on a steep slope where the roots quickly reach limestone. Planting density now stands at 20,000 vines per hectare. The vines are not trimmed but wrapped down using the tressage method, which keeps the canopy working and yields very small berries and bunches. The high proportion of whole bunches in the ferment brings perfume, structure and a tapering finish rather than weight.\u003c\/p\u003e\n\u003cp\u003ePerfumed and structured; drink from two years out to twelve.
