The red comes from a tiny parcel of vines more than fifty years old. Lamy is known for high-density planting, and the vines here now stand at 20,000 per hectare, roughly double the Burgundian norm, which forces competition between them and produces very small berries and bunches. The canopies are not trimmed but wrapped down, a practice called tressage.
