Clos du Bourg sits directly above the town; Huet has farmed it since 1953 and bought it in 1963. There is only about a metre of topsoil over solid limestone, so the vines tap into the mineral bedrock almost at once. The warmth of the site combined with that geology gives wines that hold intense minerality alongside generous texture and concentration, and that count among the longest-lived dry whites in Europe. Young, they are pent-up, chalky and racy; with age they move at a glacial pace towards something honeyed, buttery and savoury. Huet’s sec bottlings carry between 4 and 8 g\/L residual sugar depending on the season, with recent releases nearer 3 g\/L.\u003c\/p\u003e\n\u003cp\u003eRewarding now but built for fifteen years or more.
