Huet has been the benchmark estate here since 1928 and farms its three great vineyards, Le Mont, Le Haut-Lieu and Clos du Bourg, biodynamically. Cuvée Constance is named for Gaston Huet's mother and is bottled only in exceptional sweet-wine years; this is only the third release of the previous decade. It is a blend of the most concentrated botrytised fruit from all three sites, picked in successive passes through the vines.
