Le Haut-Lieu is a nine-hectare plot there on deep, brown, chalky clay known locally as aubuis, where the yellow tuffeau bedrock can lie as much as four metres down. That deeper, richer soil is what sets it apart from Le Mont and Clos du Bourg: it produces round, supple wines that drink well young and are usually the first of the three cuvées to be ready. That is a question of when rather than whether, since like its siblings Le Haut-Lieu can last for decades, and bottles from the 1940s still show well. Huet’s sec bottlings carry between 4 and 8 g\/L residual sugar depending on the season.\u003c\/p\u003e\n\u003cp\u003eApproachable on release and capable of twenty years or more.
