Its soils are argilo-siliceux: stony, with green mineral clays and flint over limestone. Compared with Le Haut-Lieu, there is less clay, of a different type, and considerably more stone, and that combination is responsible for the tight structure and pungent minerality the site is known for. Because the wines from Le Mont are the most tightly wound in the Huet stable, the vineyard is used mostly for dry and off-dry bottlings rather than the sweeter styles. Chenin Blanc from this kind of ground is slow to open, and Huet's secs are made to be waited for rather than caught young.\u003c\/p\u003e\n\u003cp\u003eIt can be drunk on release but will repay ten to twenty years in the cellar, and suits oysters, roast pork or a hard goat's cheese.
