Between them the two families have worked vines here for more than 150 years, and all the fruit comes from their own vineyards. The soils are the classic Kimmeridgian mix of clay and chalky limestone that gives Chablis its distinctive mineral edge. Fermentation and ageing both take place in temperature-controlled stainless steel tanks, with no oak, to keep the wine pure, crisp and true to its place.\u003c\/p\u003e\n\u003cp\u003ePour it well chilled, at around 8 to 10 degrees. Freshly shucked oysters are the classic partner, and it is just as good with prawns, grilled whiting, sushi or goat's cheese.
