Chèvrefeuilles is French for honeysuckle, the scent that fills the southern Rhône in spring. The domaine is certified organic and long respected for its supple, aromatic reds, and under Olivier Klein the whites have caught up. Clairette now makes up half the blend, with 25 per cent Roussanne and 25 per cent Grenache Blanc completing it. All the fruit comes from the estate's cooler, east-facing sites, where limestone helps hold acidity. The bunches were whole-pressed and fermented with natural yeasts, then the wine rested on fine lees in concrete for eight months before bottling.\u003c\/p\u003e\n\u003cp\u003eDrink now and over the next three years.
