The Klein family farms at Sabran, on the western side of the valley, and has long been respected for supple, aromatic Côtes du Rhône reds; under Olivier Klein the whites have reached the same standard. He is a firm believer in the character and freshness of old-vine Clairette, which now makes up half this blend, with 25 per cent Roussanne and 25 per cent Grenache Blanc completing it. All the fruit comes from the domaine's cooler, east-facing parcels, where limestone helps preserve acidity.
