Chèvrefeuille is the French for honeysuckle, whose scent is inescapable in the garrigue there in springtime. Olivier Klein has an evident fondness for the character and freshness of old-vine Clairette, and it now accounts for half of this blend, with 25 per cent Roussanne and 25 per cent Grenache Blanc making up the rest. The fruit grows on the domaine’s cooler, east-facing sites, where limestone helps to preserve acidity. It is pressed as whole bunches and ferments on heavy solids with natural yeasts, then rests on fine lees in concrete for eight months before bottling. No oak is used at any stage.\u003c\/p\u003e\n\u003cp\u003eDrink within two or three years.
