All the fruit is certified organic. The blend is 70 per cent Grenache and 30 per cent Syrah, and Olivier Klein aims squarely at a vin de soif: juicy, buoyant fruit and floral perfume rather than extract. To that end the fruit is given a five-day cold soak and only brief time on skins, and Klein includes a significant proportion of whole bunches for lift and a bunchy, open structure.
