Néphèle blends Sauvignon Blanc and Sauvignon Gris, which together make up three-quarters of the wine, with Mauzac and the rare local Verdanel; the Sauvignon cuttings came from limestone and flint vineyards in the upper Loire. The white portion of the vineyard sits on the upper slope, where fractured Kimmeridgian rock is covered by only twenty centimetres of workable topsoil. In traditional field-blend fashion, all the grapes are whole-bunch pressed and co-fermented, a process that can run for up to three months as the wild yeasts work through, in a mix of mature barrels and stainless steel. Ageing is ten months in used barrels sourced from Domaine Jacques Selosse.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and capable of five years or more.
