The backbone is twenty to thirty-year-old vines at Préhy and Courgis, south of the town, with additions from Chablis itself and from Chichée beneath the Premier Cru slopes of Vaugiraut and Vosgros; a single 3.5-hectare parcel straddling Préhy and Courgis is the largest holding. Anything off the youngest vines is sold in bulk, which lifts what goes into bottle. Pressing runs slow, about four hours, fermentation is on wild yeast, still uncommon here, and the wine is raised mostly in tank for twenty months on lees.
