The first hugs Vincent Dauvissat's parcel and shares its 60-year vine age; the second, planted about 25 years ago, sits beside the Raveneau holding. The soil is the Kimmeridgian marl and limestone that gives Chablis its saline cut. As with the other premier cru wines from this address, the fruit fermented and aged in a combination of steel tank and used barrels of various sizes, around 30% of the volume in wood, and maturation now extends to two years before bottling.
