The topsoil is sandy and rocky, rich in the Kimmeridgian limestone and fossil shell that gives Chablis its saline drive. The estate at Chablis, founded by Stéphane Moreau and now run by Virginie Moreau, works with low yields, long lees ageing and old barrels. The holding here covers two contiguous plots, one of fifty-year-old vines and a second replanted more recently. The wine that results is concentrated and layered, earthy and mineral in the way the best examples of this vineyard are, with more flesh than Chablis is often given credit for.\u003c\/p\u003e\n\u003cp\u003eBest from three years and capable of ten or more in magnum, it suits oysters, grilled fish and roast chicken.
